March 8th was International Women’s Day and CHOC Chick attended the brilliantly organised Women Unlimited Conference: Stepping into Success. It was an incredibly inspirational day with amazing speakers including Liz Warom Founder and CEO of Temple Spa, Emma Wimhurst Author of Boom!, Rebecca Harding Founder and MD of Delta Economics and the incredible awe inspiring Camila Batmanghelidgjh, founder of Kids Company. Not only was it fantastic to meet and mingle with so many wonderful and successful women, but we were also highlighted as “The next company to watch in 2010″ so watch out world, her come the CHOC Chicks!

Saturday, August 22nd, 2009I’ve been making raw chocolate for around 2 years now and always based it on the Simple CHOC Recipe where you melt the cacao butter first and then add the powder and agave. However, as some people have commented that the agave doesn’t always mix well, I decided to see if there was a better way to ensure all the ingredients blend well every time.
So here it is ladies and gents….all you need to do is simply melt every thing together! Doesn’t get any easier than this.
So here is the Even Simpler Raw CHOC Recipe:
Add all the following ingredients together into a bowl, place over a pan of hot water (Bain Marie or Baño Maria in Spanish) and melt over a low heat. Ensure all utensils and the bowl are dry before the ingredients are added as water can cause the mix to separate.
- 100g CHOC Chick Raw Cacao Butter
- 6 level Tablespoons CHOC Chick Raw Cacao Powder
- 2-3 Tablespoons CHOC Chick Agave Syrup
- 1 Small pinch of rock salt (good quality sea salt totally lifts the chocolate flavour)
Use a metal balloon whisk to mix the ingredients while they melt (wooden spoons don’t blend as well). Taste the mix once melted and add more Agave if you prefer a sweeter taste.
The CHOC mix tastes delicious plain but there is always room for some CHOCcreativity, so feel free to add some chilli powder for Chilli Chocolates or peppermint essence or vanilla extract, orange peel, coffee or orange liquors are all things that can be added. Our CHOC Chick favourite combination has got to be sprinkling in some crushed cardamom seeds and sea salt (absolutely amazing!!).
Once you have the right taste, pour into ice cube trays, silicone moulds or even take away tubs to make fabulous raw chocolate bars. Place in the freezer and leave to set for 20mins to half an hour.
Keep in the fridge or freezer and eat to your hearts content.

Thursday, July 9th, 2009Summertime and the living is easy…..and what could be better than a Chocaliciously chilled Raw CHOCsmoothie or Raw CHOCice Cream?
Super simple to make, the CHOCsmoothie is a great start to your day and a delicious way to boost your antioxidant levels. Or leave in the freezer for a few hours and enjoy as a yummy and healthy CHOCice Cream treat to cool you on a lovely sunny day.

Raw Choclate Ice Cream
Ingredients
- 3 small or 2 large frozen bananas
- 3 tbs raw cocoa powder
- 2 tbs tahini paste or other nut butter (organic peanut butter is delish)
- 1 tbs agave syrup
- 2 cups water or water mixed with dairy or soya milk or 2 cups of rice milk
- Handful of ice if making a smoothie

Raw Chocolate Smoothie
Directions
- Chop the bananas and place all ingredients in blender.
- Blend well adding the water/milk mix till smooth
- Pour into a plastic tub and freeze for about 2-3 hours, remove and let defrost for about 10 minutes, spoon onto bowls and serve with berries and summer fruits
- Or if you are impatient like us, pour into glasses and drink immediately!
- Makes 4 large CHOCsmoothies or a big tub of CHOCice Cream.
CHOCcreative Tip: Instead of throwing out over ripe bananas, wrap them in foil and pop them in the freezer, these will then make perfect frozen bananas for this recipe.
Amazingly CHOCalicious Raw Chocolate Cake
Wednesday, February 25th, 2009This is honestly THE most amazing chocolate cake ever! And it’s sugar and gluten free and full of goodness. I tried this recipe out yesterday and still can’t believe how easy and absolutely delicious it is. So CHOCalicious (my daughter Ella named it) is this cake that I had to put half of it in the freezer so I didn’t eat it all up myself.
Here is the recipe, hope you enjoy it as much as I did!
CHOCalicious Raw Chocolate Cake
Ingredients
- 240g walnuts or mixed nuts (I used 2 packets, 120g each, of mixed nuts that included almonds, hazelnuts, brazil nuts with walnuts)
- Dash salt
- 12 pitted medjool dates, un-soaked
- 6 tablespoons raw cacao powder
- 2 tablespoons agave syrup
- 1 teaspoon vanilla bean extract
- 3 teaspoons water
- Optional - fresh fruit to garnish (strawberries and or raspberries)
Blend nuts and salt in a food processor until finely ground. Add dates, raw cacao powder, agave and vanilla, process until mixture begins to stick together. Add the water and process briefly.
Line a dinner plate with greaseproof paper. Add the mix and form into a 5-inch round cake. Wrap the cake in the greaseproof paper and place in the freezer for around half an hour or chill for 2 hours in the fridge.
While it sets happily, you can make this delicious icing or CHOCfrosting or if you prefer it without any icing and are slightly impatient (like me), simply cut up into squares and eat as brownies!
CHOCfrosting
- 25g raw cacao butter
- 2 table spoons raw cacao powder
- 1-2 tablespoons agave (to taste)
- ½ teaspoon vanilla bean extract
- 2 tablespoons cream
Melt the raw cacao butter in a bowl over a pan of boiling water. Once melted, remove from heat and add the cacao powder, agave syrup, vanilla and mix well. Once blended add the cream and mix again. The consistency will become thicker as the cream is added. Leave for a few moments to thicken.
Remove the cake from the freezer/fridge. Place on a serving place. Ice the cake with the CHOCfrosting mix and place back in the fridge to set for around 1 hour. You can also garnish with fresh fruits of the forest, raspberries or strawberries, serve and enjoy!
Simple Raw Chocolate Recipe
Thursday, February 5th, 2009Raw chocolate is incredibly easy to make (especially if you have a CHOC Chick Kit). Here is our simple Raw CHOC Recipe to help you on your way.
Raw chocolate making ingredients:
- 100g Raw cacao butter
- 4tbs Raw cacao powder
- 2-3tbs Agave syrup (or to taste)
- 1-2tsp Vanilla bean extract
- Ice cube trays or moulds
Chop or grate the cacao butter, place in a glass bowl and melt gently over a pan of boiling water. Once the cacao butter has melted remove from heat and add the raw cacao powder and vanilla bean extract. Mix in the agave syrup, make sure to mix this well to ensure the mixture has blended well and taste to see if mix is sweet enough (feel free to add more ageve if you prefer a sweeter taste). You raw chocolate mix will have a runny consistency so simply spoon or pour into ice cube trays or chocolate moulds.
Place in the fridge for 1.5 to 2 hours or in the freezer for half an hour to set. Once set, remove from moulds and enjoy!


Whiskey Infused Raw Chocolates in Honour of Rabbie Burns
Monday, January 26th, 2009Sunday was Rabbie Burns Night and in honour of the great Bard and my first ever Burns Night Supper, I decided to make some whiskey inspired raw chocs. They were super easy to make, I just followed the Simple Raw CHOC Recipe http://www.chocchick.com/simple-raw-choc-recipe-917-0.html and simply added chopped walnuts to the moulds and wee drams of whiskey to the mix. I of course had to keep tasting the whiskey to make sure it was of the highest quality (essentialy quality control of course :-)) and the day passed with a lovely and pleasant amber hue. We went to my fabulous neighbours Maggie and Bea’s house and had the most wonderful evening. Lots of wine, whiskey and 2 amazing haggis pipped in and stabbed ceremoniously by Stevie, our Scottish neighbour. It was my first proper Burn’s Night and I now can’t wait for next year! Whiskey and raw chocolates, the absolutely perfect combination.
Simple and healthy raw chocolate recipe
Friday, January 16th, 2009Raw chocolate is incredibly easy to make (especially if you have a CHOC Chick Kit). Here is our simple Raw CHOC Recipe to help you on your way.
Ingredients:
- 100g Raw cacao butter
- 4tbs Raw cacao powder
- 2-3tbs Agave syrup (or to taste)
- 1-2tsp Vanilla bean extract
- Ice cube trays or moulds
Raw Chocolate Making Directions
70g of powder (4tbs) and 100g of butter makes approximately 32 chocolates (16 chocolates per siicone mould).
Gently melt the cacao butter over a bowl of hot water (do not overheat or you will damage the nutritional benefits of the raw chocolate). Add the cacao powder, approx 2tbs of agave syrup and vanilla bean extract, whisk well and remove from heat.
Spoon into moulds (try adding nuts and dried fruit to the moulds before spooning in the raw chocolate mixture, my favourite fruit n nut mix is cranberry and macadamia nuts)
Leave to set in the fridge for 1 - 2 hours or 20-30 minutes in the freezer.
Get CHOCCreative and add different liquors, essences and spices to the warm chocolate mix (a teaspoon of chilli powder makes fantastic chilli chocs).
